I started my research into eating raw vegan about five years ago. I discovered Ani Phyo and her series of recipe books. Ani is amazing at explaining the process of eating raw and her recipes are simple and delicious. Ani’s Raw Food Kitchen is the first book of hers that I bought, and I highly recommend it! (I’m sure you can tell from all the stickies that I use as page markers. :))
I really appreciate her “kitchen tips” that she has throughout the book. Such as “Opening and Scraping a Young Thai Coconut” or “De-seeding Vanilla Bean” and so on.
Try the Sweet Spiced Pecans (pg 145), Walnut Cranberry Squash “Rice” (pg 140), or any of her fabulous smoothies! I’m not a big dessert person, but a friend of mine swears by Ani’s raw desserts.
